If (like me) you've not yet carved your 2007 pumpkins, check out this guy's website full of inspiring jack-o-lantern-y genius before you do.  He's incredibly talented; goes by the name "Pumpkin Gutter" which strikes me as all kinds of funny; and has maybe THE most wryly, humor-injected FAQ page I've ever read in my entire life.  Here's one of his pumpkins.  Enjoy the Halloween-y, pulpy, orange goodness!
